Installer Moniter
Long ago I asked if there was a way you could moniter an installer and got a few replys but they all required me running a emulated OS and tons of junk that would take forever.
I happened across this old software and smacked myself because this is exactly what I was looking for...the bad side is that its old.

Does anyone have any idea if theres a newer program out there that can do what this program does?

Did you try the tools at Sysinternals.com?

Namely FileMon and RegMon and there are others.

Try InstallWatch if you haven't already.

Yes I did try sysinternals software, but it logs almost everything and when I first turned on regmon about 20 pages filled up. I checked on ways to filter files out but it isn't very advanced and wouldn't allow me to just watch one file... Perhaps I missed something, i'm not sure.
@dienjd
Thanks alot, I'll try this one out.
