How to put something in a variable

for exemple.. I wanna put in $LANGUAGE = LANG_FRENCH

So i belive my installater will be in french... if you think that thing will not work... so just tell how to put my installateur in french or in english without asking any question

i know tha 1033 is english and 1036 is french in my $LANGUAGE

So how can i deside my install language ?
